JUST ADD SALSA

If you need a little oomph in your meals- You're welcome! And these are more than just typical tomato recipes. YUM!


Chop mix/blitz together the following combinations to add some spice, brightness, flavor, & fun to your meals... and capers! A lot of them have capers which I LOVE!


Mexi Salsa

  • 2-4 garlic cloves

  • 2 jalepenos (take out seeds for less spice)

  • 1/2 cup fresh, chopped parsley

  • 1/2 cup fresh, chopped corriander

  • 1 tsp cumin

  • 1/2 cup finely chopped tomatoes

  • 1/4 cup olive oil

  • 2 tablespoons red wine vinegar

  • salt & pepper


Anchovy- don't be scared :)

  • 4 anchovy fillets

  • 1 cup fresh, chopped parsley

  • 1/2 bunch chopped chives

  • 2 garlic gloves (or 4 green garlic slalks)

  • Juice from 1/2 a lemon


Dilly

  • 1/2 cup fresh, chopped parsley

  • 1/2 cup fresh, chopped dill

  • 3-4 green onions finely chopped

  • Zest & juice of 1 lemon

  • 3 garlic cloves, grated

  • Olive oil (drizzle to coat the herbs)

  • salt to taste


Leeky

  • 1 cup finely chopped leeks

  • 1/4 cup fresh, chopped chives

  • 1/4 cup fresh, chopped parsley

  • 1 tablespoon capers

  • 1 tablespoon chopped olives

  • 1/4 cup olive oil

  • 1 tablespoon vinegar or lemon juice

  • salt & pepper



Sundried Tomato

  • 2-3 finely chopped sundried tomatoes

  • 1 shallot

  • 1/2 cup fresh, chopped parsley

  • 1/2 cup fresh, chopped chives

  • 1 tablespoon capers

  • 2 tsp Worcestershire sauce or coconut aminos

  • 2 tablespoon vinegar

  • 1/4 cup olive oil


Pickle

  • 1/2 cup fresh, chopped dill

  • 1/4 cup chopped pickles or gherkins

  • 2 tablespoon capers

  • 1 clove garlic

  • Juice of 1/2 lemon

  • 1/4 cup olive oil


Caper Herb

  • 2 cups mixed fresh herbs: dill, parsley, mint, ect.

  • 1 bunch of green onions

  • Zest & juice of 2 lemons

  • 2 cloves of garlic

  • 1/4 cup olive oil (+ drizzle for stir frying the capers just before serving)

  • 3 tablespoon capers (fried)

  • Chili flakes (optional)



Basil

  • 1 cup fresh basil

  • 1-2 sliced garlic cloves

  • 2 tsp chopped capers

  • 1-2 minced chillies (de-seeded for less heat)

  • 2 tsp Dijon mustard

  • Zest & juice of 1 lemon

  • 2 tablespoon rice vinegar

  • 2 tablespoon olive oil



Mango

  • 1 Mango, finely diced

  • 1/4 cup red onion or shallot

  • 1/2 cucumber, finely diced

  • 2 tablespoon fresh, chopped coriander

  • Juice of 1 lime

  • Pinch of salt



Pineapple Mint

  • 1 cup pineapple, finely diced

  • 1/4 cup cucumbers, finely diced

  • 2 tablespoon fresh, finely chopped mint

  • 2 tablespoon red onion or shallot

  • Juice of 1/2 lime

  • Pinch of salt
