CLEAN STUFFING
I realize this is more than 5 ingredients and takes a little work, but it’s Thanksgiving and you should be thankful that you ate the stuffing and not regret it. I recommend using fresh herbs as much as possible and not substituting them for dried.
Preheat oven to 350°
Bake/Toast 15 mins.:
12 slices Ezekiel Bread or Izzio’s Sourdough bread: slice into 1 inch cubes
Saute in butter or ghee until soft:
5 ribs of celery thinly sliced, including leaves
2 med carrots, peeled & thinly chopped
2 large sweet yellow onions, diced
Add & cook 1-2 minutes more:
5 cloves fresh garlic, minced
3 Tbsp fresh freshly chopped oregano
3 Tbsp fresh freshly chopped rosemary
3 Tbsp fresh thyme leaves
3 Tbsps fresh chopped sage leaves
Combine:
-toasted bread crumbs
-veggie/herbs
- 1/3 cup dried apricots, chopped
- 1/3 cup dried cranberries
- Salt & pepper to taste (about 1 tsp each or more. If you’re like me, more salt, less pepper 🙂)
Place everything in a buttered or oiled (avocado oil) 8x10 baking pan. Drizzle with 1 ½- 2 cups chicken/bone/beef/vegetable broth and gently toss/stir until veggies and bread are moist enough to stick together. If it feels dry add a little more both (almost always the case).
Loosely cover or tent your dish with foil and bake for about 30 minutes. Remove foil for a final 5 minutes or until stuffing is browned to your liking. Serve and enjoy!

Homemade Pumpkin Pie Spice Mix:
1 ½ Tablespoon cinnamon 3 Tablespoon cinnamon
1 tsp ginger 2 tsp ginger
¼ tsp cloves OR 1 ½ nutmeg
¼ tsp nutmeg 1 tsp cloves
1 tsp allspice
(Double or more as desired) Pinch of black pepper (less than ⅛ tsp)
