CLEAN Stuffed Peppers

  • Washed and halved green peppers

  • 2 cups steamed jasmine rice

  • 1 Jar Marinara sauce (no sugar listed in the ingredients)

  • 1/2 can black beans

  • 2 lbs 93% lean ground beef (cooked and fat drained)

  • 1 can diced tomatoes

  • Italian seasoning to taste


Lay halved green peppers in a casserole dish with 1/2" water in the bottom. Cover with aluminum foil and put in the oven to "soften" for 30 minutes at 350 degrees. Mix all other ingredients in a bowl and stuff peppers- season with Italian seasoning per taste. Put back in the oven, covered, for an additional 25-30 minutes.
