I do what some would consider to be some weird things with food combinations but hear me out! It’s fall and I love pumpkin (I eat it straight out of the can), so here’s one for all you pumpkin lovers out there.
NO BAKE PUMPKIN PIE CUSTARD TREAT
Mix together:
1 tsp cinnamon
¼ tsp ground ginger
2 pinches of ground nutmeg
Pinch of salt
1 cup canned pumpkin puree (or made from fresh pumpkin and strained
¼ cup maple syrup (or less based on preference)
1 tsp vanilla
Drizzle (¼ cup or less based on your preference) canned coconut milk (full fat or otherwise)
-THEN-
Stir into egg white scrambled eggs! Seriously! Or sometimes I do 1 egg and add extra egg whites. Usually a pumpkin pie custard would have eggs baked into it but I’m just making it simple for you by making it a no-bake treat, and adding a little texture. For even more protein this is delicious with a scoop of vanilla protein added (I prefer Earth Fed Muscle for this) and then you may find you prefer less or no maple syrup, too.
